tuna + mango salad

  • mango cubed (lots)
  • Pepper
  • spinach leaves
  • Salt and pepper
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1 tbsp lime juice
  • Mayo (a little)

Mushroom quiche

 3 large onions 

12oz can mushrooms 

1.5 tbsp flour 

2 eggs 

1/4 tsp pepper

1/2 cup shredded cheese 

1/2 tsp salt 


Sauté onions well (try in butter)

Add mushrooms 

Add flour

Cook 3 min, 

spice and add beaten eggs and cheese 

Combine all 

Bake 350 for a hour

Jerk Chicken

Ingredients: 1 teaspoon salt, or to taste 1 teaspoon ground allspice 1 teaspoon packed brown sugar 1 teaspoon onion powder or 1 medium onion, diced ½ teaspoon dried minced garlic or 2 cloves to 1 head fresh garlic, chopped ½ teaspoon ground nutmeg ½ teaspoon black pepper ½ teaspoon ground ginger ¼ teaspoon cayenne pepper ¼ teaspoon ground cinnamon ¼ teaspoon dried thyme leaves 1 (2 to 3 pound) whole chicken, cut into pieces ¼ cup vegetable oil instructions: 1. mix spices in oil 2. baste chicken with spice mix 3. optional: marinate for 4+ hours 4. bake uncovered at 350 F for 60 mins 5. optional: broil for up to 5 mins to reduxe liquid for shabbat and/or to make skin crispy original recipe: https://www.allrecipes.com/recipe/166292/perfect-baked-jerk-chicken/

Spiced Potatoes

Ingredients: mixed baby potatoes (20+ red or yukon gold potatoes) cut in 1/4's 3+ medium sweet potatoes cut into ~1 inch cubes 1 large yellow onion cut in 1/8's 1/4 cup olive oil (or other vegetable) 1 head (10-12 cloves) garlic, separated and crushed 1 tsp salt 1 tsp smoked paprika (best spice ever!) 1 tsp cayenne 1 tsp dill Instructions 1. combine spices in oil 2. chop veggies as above 3. mix in lege bowl 4. Baked Farmer Cheese

 Mommy's recipe: 

8 oz. farmer cheese

2 eggs

½ Cup sugar (Sarah note: I use 1/4 cup of honey)

1/2 tsp vanilla

1/2 tsp lemon juice

(Sarah note: can add cinnamon on top after mixing)


directions

Mix the eggs with the sugar, vanilla and lemon juice

Mix in the farmer cheese

Pour into small loaf pan

Bake @ 350 for 60 minutes or until firm.

Blondies

Easy No Fail Blondies

T’s secret ingredient: 1 tsp cinnamon
D’s change: 2 tsp vanilla instead of 1


YOU WILL NEED

8 tablespoons (115 grams or 1 stick) unsalted butter, melted
1 cup (215 grams) lightly packed dark brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract, optional
1/4 teaspoon fine sea salt
1 cup (125 grams) all-purpose flour
OPTIONAL EXTRAS
1/2 to 1 cup chocolate chips (white, milk, semi-sweet, dark, etc.)
1/2 to 1 cup chopped and toasted nuts
1/2 to 1 cup chopped dried fruit or shredded/flaked coconut
1/4 cup liquor (bourbon, whiskey, rum, etc.) note: Increase flour by 1 tablespoon to accommodate
1/2 teaspoon flavorings or extracts (coconut, mint, rum, raspberry, etc.)
2 tablespoons instant espresso powder

DIRECTIONS

Heat oven to 350 degrees Fahrenheit (176C). Line an 8-inch by 8-inch metal baking pan with aluminum foil or parchment paper.

In a medium bowl, stir melted butter and brown sugar until blended. Add the egg, vanilla, almond extract (optional) and salt then stir vigorously until smooth.

When the batter looks well blended, add the flour and stir until fully incorporated, then beat with the wooden spoon or spatula for 40 to 50 strokes. (The batter will be quite thick). Beat vigorously here. You want to see the batter pulling away from the sides of the bowl.

Fold in the chocolate chip, nuts or dried fruit (if using). Spread the batter evenly in lined pan and bake 20 to 25 minutes until the edges look browned, but the middle looks slightly underdone (the middle will continue to cook while it cools). Place the pan on a wire rack and let the blondies cool in the pan. Cut into 16 squares.
